Dressing:
1 C cilantro
1/2 C EVOO
1/4 C lime juice
1/4 C orange juice
1/2 tsp salt
1/2 tsp pepper
pinch of minced garlic
1/2 C plain yogurt or sour cream
pinch of cumin
Puree in a food processor or blender until smooth.
Salad:
romaine lettuce, chopped
roasted corn
shredded carrots
jicama, diced
tortilla strips
avocado, diced
green onion, diced
crumbled cojita cheese
