Spinach Mushroom Salad

Dressing:
3/4 C oil
1/3 C apple cider vinegar
small chunk white onion
1/2 tsp dry mustard
3/4 tsp salt
1/3 C sugar
1 tbsp poppy seeds
Blend all together well.

1 head red or green leaf lettuce
1 lg bunch spinach
1 red onion, thinly sliced
3/4 lb sliced mushrooms
1 C cottage cheese, rinsed with cold water
1 lb bacon rinsed
3/4 lb grated swiss cheese
